Nora Isolina Calix is in coffee production for 10 years. She was born in the industry, as her mother Rosalina was the first generation coffee producer. Her and her two brothers followed her mother's footsteps, now all four of them have their own farms but working together to improve coffee qualities. The entire family is ambitious and heavily involved in innovations, particularly in the post harvest processing, which is something they are trying to replicate across all their farms.


Lempira and Catuai are the two varieties grown on Arenera along with banana, lime, orange and liquidambar. Despite having relatively small farm, in 2020 Nora managed to produce 33 quin tales (1,518 kg) of dry parchment. She made some key changes to the processing this year. Now she is using the double fermentation to improve the cup quality. Fermented for 12 hours inside the cherry before being pulped and fermented for further 12 hours prior to washing and then dried for 24 hours.

V60 :  15g : 250g 3  pulses, 2:30-2:45 minutes, 96°C (1:16.5 ratio)

Batch Brew : 1:16 ratio, 94-96°C
