Rachia is sourced from over 350 dedicated farmers in the Idido village of Yirgacheffe, Ethiopia. These farmers deliver their ripe cherries to the Gizat washing station, where the cherries undergo meticulous sorting using density channels. The beans are then fermented for 36-72 hours, washed, and floated to remove defects before being placed on raised drying tables for 8-15 days until they reach the optimal moisture content of 11.5%.

 

The African raised beds used for drying are carefully constructed to ensure proper air circulation and temperature control, which are crucial for steady drying. Cherries are turned regularly to prevent over-fermentation or mould growth. After reaching the desired moisture content, the beans are stored in a local warehouse, where they are further processed, sorted by colour, density, and screen size, and milled ready for export.

 

Yirgacheffe is renowned for its high-quality coffee production, and the Rachia-Washed coffee is a testament to the region's rich coffee heritage and the dedication of its farmers.

 

Recommended Recipes:

 

Espresso: 20g: 60g 21-23 seconds, 94°C (1:3 ratio)

 

V60:  15g: 250g 3  pulses, 2:30-2:45 minutes, 96-98°C (1:16.5 ratio)

 

Batch Brew: 1:16 ratio, 94-96°C
