Dimtu washing station, located in the Hambela Wamena district in the Guji Zone of Ethiopia. Owned by Aklilu Kassa and operated by his son Biniyam Aklilu, this relatively new washing station sits on two hectares of land and is surrounded by rich Guji forests. Because coffee flourishes as a wild crop, local small holder farmers pick coffee from their backyards with the help of family members before delivering ripe cherries to Dimtu. The rainy season in this part of Guji lasts approximately from June to October, and then the harvest begins and the washing station swings into movement and song while 180 seasonal workers join the 8 full time employees to process coffees. Drying tables stair-step up the low slope of the ground toward the Agard four-disk pulper, which is maintained by the mechanic every morning before it begins to operate. Water is drawn from a nearby river and run through a series of cement washing channels along with the coffee as it’s scrubbed before being put in 10,000 kg fermentation tanks and then to the drying beds.

V60 : 15g : 250g 3 pulses, 2:30-2:45 minutes, 96°C (1:16.5 ratio)
