Diofanor Ruiz comes from a traditional family of coffee farmers. After becoming a certified coffee farmer, Diofanor bought his farm, La Divisa in 2005. La Divisa is located in Buenavista, Quinndio, on 14 hectares of land. Alongside coffee trees, a collection of fruits grow helping to provide shade and nutrients. Diofanor remembers a time when farmers did not taste their coffee, as it was not deemed important. After tasting his coffee for the first time, Diofanor decided to move away from the traditional farming he had learnt whilst growing up and focus on practices that improved the quality of coffee. This coffee is grown by Diofanor Ruiz on his farm La Divisa. It is harvested on ripeness criteria, floated and hand-sorted to remove defects. The cherries are exposed for 30 hours in an underwater fermentation process. Then they are pulped, carefully washed and dried in a controlled environment to ensure ideal conditions.
