His Castillo varietal production is organic and fully sustainable. With over 40 years of experience, Diofanor
treasures the traditional knowledge by respecting its native environment. Water usage and recycling are paramount to him.


Diofanor has worked as a farm administrator for 20 years, and 18 years ago, he started managing his family property, Finca La Divisa. Diofanor aims not to use any chemicals on his farm where possible, and since 2014 he has not used any herbicides or pesticides. This micro lot is 100% Castillo, exposed to an anaerobic fermentation of 12 hours before being pulped and dried on raised beds until the moisture level reached 10.5%

V60 :  15g : 250g 3  pulses, 2:30-2:45 minutes, 96°C (1:16.5 ratio)
